Location matters just as much. Hotels near the beaches of Kata, Karon, Bang Tao, and Kamala sit on calm western shores. The east coast is quieter, but the tides are stronger there, so it's less suitable for swimming with kids.

Breakfast isn't included everywhere, and airport transfers are often paid. Check this before booking so you don't end up paying extra on site. And one more detail: at some hotels the kids' club runs on a schedule and closes for lunch.
